Who Is Chef Marla?
“Creative, whimsical, knowledgeable, a passion for perfection” are all phrases that have been used to describe Chef Marla Cohen. A graduate of the prestigious Culinary Institute of America in Hyde Park, New York, Marla has 40+ years experience in the food industry. Her culinary experiences range from owner of an artisan bakery and catering business, vocational college culinary instructor to a corporate Executive Pastry Chef. She was also an Executive Chef in the private club industry and a restaurant owner.
Her knack for public speaking, zany sense of humor, vast culinary knowledge and well-developed palette make Marla a “must” at many culinary venues.
With the collaboration of Lyn Cloninger, Marla co-created “PHOOD on Main,” an upscale, fine dining restaurant/catering company. Lyn had many years in the food business including 8 years as the General Manager of fine dining city club. Together, their “eyes” for plate presentation, creating unique menus, and capturing the essence of an event stirred excitement and garnered much interest in the So Cal area.
Now you are able to purchase their seasoning line, 13 blends, that Marla created over many decades. These "Shits" have been on thousands of plates....suffice it to say, every kitchen Chef Marla cooked in....there was a "Shit Storm"(of course we have that label too!!).
Marla is a tad eccentric....so it is only expected that the fun names for these seasonings have multiplied over the years. The "Shit Load" of labels that are now available for the very first seasoning she developed....the Mama Shit of them all....Chef Marla's Super Shit (an All-Purpose blend) are a hoot to peruse. Happy hunting......!!
Even without a secret decoder ring....it's easy as shit to figure out the deal-if it has a black lid, it is the original Super Shit (All-Purpose). If it has a red lid, that indicates it is one of the other 13 Chef Blends.

Chef Marla’s great-grandmother cooked solely by the Yiddish “Shit arein” method, which translated means, “to throw a little of this and a little of that” …. and it’s a method of cooking that Chef Marla continues to use to this day.
